Beginning Assistant Choral Director

I will be starting a new teaching position as an assistant high school
choir director. I have taught elementary music (through the OrffSchulwerk
approach) for several years, no experience with high school, however.

I need suggestions for books to help me in sequencing and pacing a rehearsal, introducing a new piece, sightreading, etc.

Have you spoken with your head director for guidance? I'm sure they will have a specific idea of what they would like you to accomplish. There are many texts about choral teaching.
 
Essential Musicianship by Emily Crocker and John Leavitt is very common and set up to be used as a course.
 
There are a number of other ones and tons of online resources for structuring a choral rehearsal.
